As my two good friends, Trisha and Cleo, were coming over for dinner last night and they both are always ready to ply me with amazing food, I thought it only right to come up with a nice dessert to go with the veggie curry we we having.
I say I came up with this recipe, I didn’t I popped over to Waitrose and found this really simple recipe for Mango Lassi Fool. It seemed to fit perfectly with the Indian food theme, and came with the added advantage of not containing any sugar, something I should cutting down on.
Cardamom – the recipe says 4 cardamom pods crushed in a pestle and mortar. I could only buy cardamom grains, and I don’t (yet) own a pestle and mortar so instead i just took a handful and crushed them with a mug, turned out fine.
2 Fresh mangoes – I’m not really fussy and would have happily used tinned, but I just happened to see these were available so got them.
Double cream – this is something we cannot get in Germany. The closest thing you find is Schlagsahne which is basically single cream that I then proceeded to whip the hell out of.
Natural yoghurt – no comment here, Germans love yoghurt.
Zest and juice of 1 lime
2 tbsp clear honey
Dried mango – I had to buy the whole pack but in reality it’s just for decoration so if you want to keep the cost down, you could skip it, but it looks pretty so I went with it.
